About our Meat
Our lamb and beef is all pasture raised, grass fed, and grass finished.
Our beef is dry aged for 21 days. It's a process that not only helps the beef develop flavor, but also makes it far more tender than it would be completely fresh. When beef is dry aged, moisture is slowly drawn out of it, allowing enzymes to break down the muscle fibers and resulting in a more tender and flavorful steak. Due to moisture loss, weights per pound will be less. But know you're buying exceptional local beef and not water!
