Only two flank steaks are available per cow, and they are customer favorites, so they often sell out quickly. Flank steaks are good marinaded, then cut across the grain before serving. This is the cut of choice for carne asada.

 

Dry aged for 21 days.

 

Flank steaks come one per package. Packages average 1.5 lbs.
