The ultimate in tender and most lean cut, also called Filet Mignon.  These delicious steaks come from the tender muscle on either side of the backbone. And they've been dry aged for 21 days which makes them extra tener.

 

Tenderloin filets come 1 steak per package. Each filet averages 4 - 6 oz.  (And remember, dry aged beef has less water content, so don't be deceived by the weights. These steaks still provide plenty for a special dinner.)
